Carnival Corn Dogs

 12 hot dogs
 2 qts oil for frying
 1 egg
 ¾ cup yellow cornmeal
 ¾ cup flour
 1 tbsp sugar
 ¼ tsp salt
 1 ½ tsp baking powder
 2 tbsp honey
 ¾ cup buttermilk
 2 tsp oil
 12 wooden skewers

In a large pot heat the 2 quarts of oil to 350 degrees.

While the oil gets to temperature, whisk together the cornmeal, flour, sugar, salt and baking powder. Then add the egg, honey, buttermilk and 2 tbsp of vegetable oil and stir until combined. Pour this all into a tall glass for easier dipping.

Insert a skewer into each hot dog you're making. Dip each hot dog into the batter glass and swirl to make sure its evenly coated.

Tip: Make sure that the batter is coating a bit of the skewer/stick so that the coating stays on.

Cooking one or two at a time, fry each corn dog for about 2-3 minutes, turning a couple times, and then transfer to a paper towel lined plate. Repeat with all the hot dog skewers.

Serve with yellow mustard or ketchup.
