Green peas fritters

1 lb frozen green peas, thawed
 ½ cup sour cream
 1 garlic, minced
 ¼ cup parsley, chopped
 3 tbsp mint, chopped
 3 tbsp chives, chopped
 1 tsp lemon zest
 2 eggs, beaten
 2 tbsp lemon juice
 ½ cup flour
 3 tbsp clarified butter

Firstly, boil the peas, in a pot of salted boiling water until softened. When done, drain and transfer to a food processor. Then, add the garlic, parsley, mint, lemon zest, chives, salt and pepper. Pulse to combine.

Next, combine together, sour cream, eggs, and lemon juice, in a bowl. Then, add this mixture to a food processor, and pulse for a couple of minutes, until its well combined and the peas are broken down. When done, transfer to a bowl, stir in the flour and let it rest for about 10 minutes.

Heat a skillet over medium heat, and melt 1 tbsp of butter. Scoop 1/4 cup of the batter, onto the skillet and flatten it into a small patty. Cook for about 2 minutes on each side, until golden brown. When done, transfer to a wire rack. Repeat until you have used up the remaining batter, adding butter to the skillet if necessary.
