This Portabella Broccoli Veggie Burgers are packed with healthy goodness. In one patty you're getting broccoli, beans, and mushrooms. Whether you're a full time vegetarian or just trying to cut out meat, this recipe can substitute a hamburger for me any day.
In a large bowl, add 1 cup of black beans and mash them until they are a thick paste.
Then, add in the mushrooms, the rest of the black beans, broccoli, garlic, onion, Worcestershire sauce, and steak seasoning. Mix just until coated, then add the eggs, cheese and bread crumbs, and mix gently with a large spoon until the mixture is combined. Set aside.
Place a large pan over medium heat and add 2 tbsp of oil. Once the oil starts to shimmer, using dampened hands, scoop a ½ cup of mixture into the palm of your hand and gently shape into patties.
Tip: The mixture should hold a burger shape. If it doesn't, add just a tbsp more of bread crumbs.
Place patties into the oil and cook for 3-5 minutes per side or until golden brown and a crust has formed on each side.
