For a subtle festive meal, try one of three delicious red and green stuffed hasselback chicken breasts. Inspired by three world cuisines, this will be a hit at your Christmas table.

 8 oz bamboo shoots
 2 bunches scallions
 4 tbsp chilli garlic paste
 2 tbsp sesame oil

 16 oz mozzarella
 2 large tomatoes
 ¼ cup pesto
Mexican Chicken
 1 can chipotles in adobo
 5 oz cotijo cheese, crumbled
 guacamole salsa

Slice your chicken breast from the top down, not cutting all the way through but leaving 1/2 inch in tact at the bottom.
