Twice-Fried Smashed Plantains

Also known as "Tostones", Smashed Twice-Fried Plantains, are a staple of Latin American and Caribbean Cuisine. If you haven't had them, you are missing out. Not to worry! These are so simple to make at home, you won't be missing out much longer. 

Smashed pan-fried plantains

Ingredients:
 ¼ cup canola oil
 3 ripe plantains, peeled and sliced
 smoked paprika
 salt
 pepper

In a medium nonstick skillet set over medium heat, heat the oil.

Add the plantains slices to cover the bottom of the skillet with enough room to flip. Fry for about 2 minutes per side, until golden brown on both sides.

Transfer to a paper towel-lined plate and use the bottom of a pint glass to gently smash each fried plantains.

Return the plantains to the pan and fry again. Sprinkle with salt, pepper and paprika. Repeat with the remaining plantains. Serve warm.
