Gnocchi with Spinach and Blue Cheese

A combination you may not try that often, spinach and blue cheese come together to create a delicious sauce for an easy gnochhi meal!

Ingredients:
 16 oz gnocchi
 1 tbsp olive oil
 1 tbsp butter
 1 onion, diced
 2 cloves garlic, minced
 8 oz spinach
 5 oz creamy blue cheese
 salt
 pepper
Directions:

Heat a large skillet over medium-high heat. Add oil and butter and melt it down. When melted, add the onion, and the garlic, season with salt, and saute until soft and fragrant.

Next, add the spinach, stir and put the lid on for a few minutes to wilt down.

Meanwhile, bring a large pot of salted water to a boil, and cook the gnocchi according to package instructions. When they start floating in the pot, they are ready. Drain and add to the large skillet.

Crumble the blue cheese on top of the gnocchi and spinach and stir until the cheese starts to melt.

Serve with some parsley on top to garnish.
