Peanut Sauce Chicken Strips

Borrowing from the flavors or a traditional satay chicken with peanut sauce, Peanut Sauce Chicken Strips are a dressed down homemade version of your favorite Thai food.

Ingredients:
 ½ cup all natural peanut butter
 1 clove garlic, minced
 2 tsp lime juice
 1 tsp soy sauce
 1 tsp curry powder
 2 chicken breasts, cut into strips

Preheat your oven to 400°F.

Mix together the peanut butter, garlic, lime juice, soy sauce, and curry powder. Depending on the thickness of your peanut butter, you may need to add warm water to loosen the sauce up.

In a large bowl, add the chicken strips and mix to coat.

Arrange on a parchemnet lined baking sheet and bake for 15-20 minutes, flipping halfway, until the chicken is cooked through.
