Cauliflower “Steaks”

This is a vegetarian dish that is quick and easy to make. It's a perfect light meal for hot summer days. Just make a big salad on a side and you have a complete meal. Even if you are not a vegetarian, you can make this recipe as a side to a different meal.

Ingrediants:
 1 head of cauliflower, sliced through the core into 4 steaks
 ¼ cup olive oil
 2 tbsp lemon juice
 2 cloves garlic, minced
 1 pinch red pepper flakes
 salt
 pepper
Directions:

Preheat the oven to 400 degrees F and either line a baking sheet with parchment paper or grease the sheet. Place the sliced cauliflower "steaks" on the baking sheet.

Whisk together olive oil, lemon juice, garlic, red pepper flakes, salt, and black pepper together in a bowl. Brush 1/2 of the olive oil mixture over the tops of the cauliflower steaks.

Bake cauliflower steaks in the preheated oven for 15 minutes. Flip the steaks over and brush with the remaining half of the olive oil mixture.

Continue roasting until tender and golden, about 15 minutes.
