Some days all you want is a big bowl of hot and cheesy comfort food. That's exactly what Weeknight Taco Pasta is all about. Using ingredients you already probably have in your pantry, you can whip this up in under half an hour. The beauty of this recipe is not only that it takes under half an hour to make, but that you can really customize it to fit whatever you have in your kitchen. Throwing in some jalapenos, different cheeses, or beans instead of ground beef are all ways to make this recipe your own!
Bring a large pot of water to a boil and cook your pasta according to the directions on the box and drain.
Meanwhile, in a pan, heat vegetable oil and sauté the onion until translucent. Then add the ground beef to the pan and cook until browned. Season with garlic powder and cayenne pepper.
Next, add the taco seasoning and water. Mix everything together and cook until the water evaporates, then add tomato sauce and salsa.
Remove the pan from heat and add the pasta to the meat mixture, and stir until combined. Stir in the oregano and cheese, letting the residual heat gently melt the cheese.
Serve warm with additional cheese on top.
