Indulge in a salty flavor bomb that delivers some hidden vegetables by making Bacon Wrapped Stuffed Chicken Roll-Ups.

Ingredients:
 4 chicken breast halves
 5 oz frozen spinach, thawed
 ½ cup sour cream
 ½ cup pecorino cheese, shredded
 8 bacon
 salt

Preheat the oven to 375°F.

In a large bowl, defrost the spinach and stir in sour cream and pecorino cheese.

Place the chicken breasts between two sheets of plastic wrap and pound to an even 1/2 inch thickness

Spoon in one quarter of the filling into each pounded chicken breast. Roll up the chicken away into a tight roll.

Wrap each roll with 2 slices of bacon. If needed, secure the roll with toothpicks to make sure they don't come undone.

Bake for 30 minutes and then broil for an additional 5 minutes to crisp up the bacon. (This time can vary depending on the thickness of your chicken)
