Baked Cheesy Fajita Casserole brings your favorite fajita flavors into a slice-able casserole that's gooey and crispy at the same time. This is a great make ahead recipe to bring to a potluck!
Preheat your oven to 400°F.
Add the chicken breast, bell peppers, and onions to a sheet pan. Toss with 3 tbsp oil, fajita seasoning, salt, and pepper. Make sure that everything is evenly coated.
Bake for 20-25 minutes.
Meanwhile, brush a casserole dish lightly with 2 tbsp oil and add 6 tortillas on the bottom. Placing them in the pan so that they go up and over the side and overlapping the sides to create one continuous layer on the bottom.
Layer 1 cup of mozzarella cheese over the tortillas.
Remove the veggies and chicken from the oven and allow to cool slightly. Reduce the oven temperature to 350°F.
On top of the cheese, add the baked peppers, onions, and chicken.
Top that with another layer of 1 cup of mozzarella cheese.
Add 2 more tortillas on top and fold in the edges of the tortillas.
Cover the casserole with a layer of parchment paper and place another baking dish on top to weigh it down.
Bake for 30 minutes or until the tortillas are crispy and the cheese has melted.
