Ham and Cheese Stuffed Chicken hearkens back to simpler times of school lunches of ham and cheese sandwiches. This recipe elevates those flavors to a gooey parcel of flavors that's perfect for dinner!
Preheat your oven to 350°F.
Butterfly your chicken breasts. To do this, cut each chicken breast in half horizontally, but don't cut all the way through. Leave about an inch attached on one side, and open the chicken breast like a book so it lays flat.
Pound the chicken into an evenly thin piece and season with salt and pepper on both sides.
Place one slice of ham and one slice of cheese on the flattened chicken and roll it up, tucking the ends in.
Set up a dredging station with three bowls. In the first, flour, the next beaten eggs, and the last one with breadcrumbs.
Working with one chicken roll at a time, dip the chicken in the flour making sure all surfaces are covered, then the egg, then the breadcrumbs. Place on a baking sheet and repeat with remaining chicken rolls.
Bake the chicken for 30-35 minutes. Remove from oven, then add additional slices of cheese on top and return to the oven until melted, roughly 2-3 minutes more.
