Cheesy Broccoli Stuffed Chicken

Cheesy broccoli stuffed chicken is great way to make your kids eat their veggies. This dish is absolutely delicious, colorful and flavorful. It's simple to make and it doesn't take much time, so it's a perfect weeknight dinner.

Ingredients:
 3 chicken breasts
 1.50 tsp garlic powder
 ¼ tsp paprika
 1 cup broccoli florets, chopped
 red bell pepper, diced
 1 cup Cheddar cheese, grated
 1 tbsp mayonnaise
 2 tbsp olive oil
 salt
 pepper

First, preheat the oven to 425 degrees F.

To prep the chicken, season both sides of the chicken breasts with salt, pepper, paprika and ½ tsp garlic powder. Use a sharp knife to cut a slice trough the middle of the chicken breasts, but not all the way trough, creating a pocket for the filling.

For the filling, boil the broccoli for 3 minutes. Once the broccoli is cooked, drain any excess water and put in the clean bowl. Then add the bell pepper, cheese, mayo, remaining garlic powder, salt and pepper to taste.

Mix until combined, then divide the mixture between the chicken breasts. Stuff into the pockets in the chicken, using a toothpick to secure the sides if necessary.

Once the breasts are stuffed, heat a large oven-safe skillet, over medium heat and add the olive oil. Next, sear the chicken for 4 minutes on each side.

Then cover the skillet with foil and bake in preheated oven for 15-17 minutes.
