Cream of Broccoli Soup

Comfort food at it's finest. If you're still trudging through winter, try our Cream of Broccoli soup to brighten your day with some fresh veggies.

Ingredients:
 2 tbsp butter
 1 leek, chopped
 3 cloves garlic
 5 cups broccoli florets
 3 cups chicken broth
 1 cup heavy cream
 salt
 pepper
Directions:

In a large pot over medium-high heat, melt the butter. When the butter is melted, saute the leeks and garlic until softened. Season with salt and pepper.

Add broccoli florets and chicken broth. Simmer for 10 minutes, or until the broccoli is softened.

When the broccoli is softened, remove the pot from heat and use an immersion blender to blend the soup.

Return the pot to the heat, and stir in 1 cup of heavy cream. Continue cooking until the soup has thickened to your ideal consistency, about 10 more minutes.

Make sure to taste and adjust seasoning before serving.
