We took traditional Ham and Cheese Croquettes and supersized them to make Extra Large Ham and Cheese Croquettes! Only a few ingredients and so impressive to serve at a dinner party, these are a surefire hit.
Bring salted water to a boil and add cubed potatoes. Boil 20 minutes, or until fork tender.
Drain the potatoes and mash well with a potato masher. Taste the mash and season with salt and pepper.
Let the mash come to room temperature and when it is cool to the touch, add an egg and stir to combine.
Meanwhile, layer your ham and cheese slices into a stack. Cut this stack into quarters and set aside.
Add 1/4 of the mashed potatoes into the palm of your hand. Place one ham and cheese stack in the center and work the mashed potato up and over the filling. Shape the croquette into a round shape and set aside. Do the same with the remaining ingredients.
In a large pot, bring oil to 350°F. Fry each croquette for about 3 minutes, flipping halfway through, until golden brown.
Serve warm with a dipping sauce of your choice.
