Hearty Italian Sausage Soup

Nothing is more comforting on a cold winter day than a big bowl of hearty soup. Hearty Italian Sausage Soup is loaded with potatoes, sausage, and spinach, this soup is a complete meal in a single bowl.

Ingredients:
 2 tbsp oil
 1 lb hot Italian sausage, casings removed
 2 tsp red pepper flakes
 2 bacon
 1 large onion
 2 cloves garlic
 3 cups chicken broth
 3 large potatoes
 1 cup heavy cream
 10 oz fresh spinach
 salt
 pepper
Directions:

In a large pot over medium high heat, add oil and sausage meat. Break up large pieces of sausage and cook until no longer pink.

Remove sausage from the pot and drain any fat from the pot.

Chop the bacon into thin strips and add that to the pot. When the bacon is cooked, remove it from the pot but leave any remaining fat.

Next, add in the large diced onion and minced garlic cloves. Saute until the onions soften.

Add chicken broth, cover with a lid, and bring to a boil.

When boiling, add 3 large potatoes, sliced into thin rounds. Cook for 20 minutes, uncovered, or until the potatoes are fork tender.

When the potatoes are done, add in the heavy cream and the reserved bacon and sausage. Stir to combine and cook for 3-5 minutes to heat everything through.

Turn off the heat and add in the spinach, letting the residual heat wilt the leaves.
