Pat the pork chops dry with a paper towel and season liberally with salt and pepper.
In a large skillet, heat 3 tbsp of oil. Once the pan is very hot, add the pork chops and cook for 4-5 minutes on each side (until they reach 135°F in their thickest part)
Remove the pork chops from the pan to rest.
In the same skillet, add apple cider and sugar. Simmer until reduced by half.
Add mustard, salt, and pepper.
To serve, pour the glaze over the pork chops and any sides you have prepared.
