Bacon and Beef Onion Bombs

All your favorite things wrapped up in a bacon parcel, what more could you ask for for dinner? Bacon and Beef Onion Bombs are a fun way to present a really hearty group of ingredients. The Ground beef is surrounded by a juicy onion layer that keeps the meat moist and flavorful. The bacon on the outside does double duty as it adds a salty and crunchy layer, but also keeps the whole bomb tied together. Not only physically, but with a delicious taste all the way through

Ingredients:
 4 large onions
 2 lbs ground beef
 2 packs bacon
 ½ cup onion, diced
 ½ cup breadcrumbs
 ½ cup mushrooms, chopped
 ½ cup parsley, chopped
 2 tbsp soy sauce
 2 tsp Worcestershire sauce
 ½ cup BBQ sauce
 1 egg
 salt
 pepper

Preheat your oven to 425 °F

Cut off the tops and bottoms of the onions and remove the outermost skin. Then, cut the onion in half and peel the layers apart, keeping the biggest layers to stuff with meat.

Setting the onion layers aside, mix the ground beef, diced onion, parsley, mushroom, egg, bread crumbs, Worcestershire sauce, and seasonings in a large mixing bowl by hand.

Place a handful of the meatloaf mixture inside two large layers of onion, encompassing the meat. Repeat with each set of onion layer pieces until all the meat is used.

After that, wrap the onion meatballs in bacon, using 2-3 slices per ball (depending on the size of your bacon slices). Most importantly, secure the bacon with toothpicks to keep it from unfolding during cooking.

Bake at 425 °F for 40 minutes. Then, cover the beef bombs in BBQ sauce and bake for an additional 5 minutes.
