Bacon Wrapped Jalapeno Popper Chicken

Everyone's favorite bar snack has transformed into a tasty dinner! Bacon Wrapped Jalapeno Popper Chicken is indulgent and so easy to make.

Ingredients
 4 chicken breasts (boneless, skinless)
 1 cup cream cheese
 ¼ cup jalapenos, diced
 1 cup cheddar cheese
 32 bacon
 salt
 pepper

Preheat oven to 400°F.

Butterfly your chicken breasts. To do this, cut each chicken breast in half horizontally, but don't cut all the way through. Leave about an inch attached on one side, and open the chicken breast like a book so it lays flat.

Pound the chicken into an evenly thin piece.

In a bowl, combine cream cheese, cheddar cheese, and diced jalapenos. Add salt and pepper and mix thoroughly.

Working with one flattened chicken breast at a time, add a a quarter of the filling (or as much as can fit comfortably) to the middle.

Fold the chicken breast around the filling. Fold in the edges first, and then roll up the chicken like a burrito.

Wrap each chicken parcel in 8 slices of bacon. The easiest way to do this is to lay out the slices in a sheet across plastic wrap and then use the plastic wrap to help wrap the chicken.

Bake at 400°F for 20-30 minutes. Broil for an additional 1-3 minutes at the end of cooking time to crisp up the bacon.
