Baked Tomato and Balsamic Chicken

Baked Tomato and Balsamic Chicken is the one-pan wonder for a low calorie, low effort, Italian chicken. Pair with a roasted vegetable for a complete meal.

Ingredients:
 4 chicken breasts
 4 tbsp olive oil
 1 tsp oregano
 1 tsp garlic powder
 1 tomato
 1 cup balsamic vinegar
  cup honey
 salt
 pepper
Directions:

Preheat the oven to 400°F.

Season the chicken breasts with salt, pepper, garlic powder, and oregano. Place on a sheet pan lined with parchment paper.

Bake for 20-30 minutes until cooked through. This time will vary based on the thickness of your chicken breasts.

While the chicken is cooking, add balsamic vinegar and honey to a saucepan over medium heat. Simmer, stirring occasionally, until the sauce has thickened.

Remove the chicken from the oven and top with the balsamic honey sauce. Add two slices of tomato on top of each

Broil for 1-2 minutes, until the tomato softens.

Serve with additional glaze and basil to garnish.
