Buffalo Chicken Sloppy Joes

Buffalo Chicken Sloppy Joes are the ultimate comfort food, but by using lean ground chicken and not loading it up with butter and oil we can indulge more frequently than we could with wings. If you would like the whole wings-with-carrots-and-celery experience, you can substitute half the carrots with celery. You can use any type of dressing you like, traditionally we like ranch or blue cheese, or just sprinkle some crumbled blue cheese on top.

This recipe only uses one pan, tastes like your favorite bar snack, and is secretly healthy! What more could you ask for?

Ingredients:
 1 lb chicken breasts, ground
 8 oz can tomato sauce
 1 cup carrots, diced
 ½ onion, chopped
 2 tsp oil
 ½ green bell pepper, diced (optional)
 ¼ cup hot sauce
 1 tbsp Worcestershire sauce
 1 cup Greek yogurt,ranch or blue cheese dressing, or crumbled blue cheese
 salt
 pepper
Directions:

Heat oil in a saute pan over medium heat. Add onions, carrots (and half of the green bell pepper, if you choose to use it), and a pinch of salt and pepper.

Cook for 5-6 minutes, or until the onions become translucent and vegetables are softening. Add the ground chicken, and cook until done and slightly browned, breaking up the meat as it cooks.

Stir in the tomato sauce, hot sauce, and Worcestershire sauce, and simmer for several minutes, until heated through. Spoon onto rolls and top with blue cheese dressing or crumbles to serve.
