Carrot Cake Loaf

If you don't want to make a whole cake, make loaf pan Carrot Cake and top it with a simple orange juice glaze or a cream cheese frosting!

Ingredients:
 1 cup raw cane sugar
 1 cup vegetable oil
 3 eggs, lightly beaten
 2 cups grated carrot
  cup raisins
 zest of 1 orange
 1 ½ cups self-rising flour
 1 tsp baking soda
 2 tsp cinnamon
 1 tsp grated nutmeg
Directions:

Preheat the oven 350°F and grease and line a loaf pan.

In a large bowl, add the sugar, oil, and beaten eggs. Mix well.

Stir in carrots, raisins, and orange zest.

Add in the relf-rising flour, baking soda, cinnamon, and nutmeg. Stir until everything is combined well.

Pour the batter into the loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Let cool for 10 minutes before removing from the loaf pan. Then, top with icing or glaze if desired.
