If you like the spicy and crunchy taste of bacon wrapped jalapeno poppers, try making Cheesy Bacon-Wrapped Jalapeno Chicken at home for dinner!
Preheat the oven to 400°F.
Cut your chicken breasts in half lengthwise and pound them between two sheets of parchment paper or plastic wrap until they are thin. Season with salt and pepper.
Cut the jalapenos in half. If you want them to be extra spicy, you can leave the seeds in the peppers. However, I usually scrape the seeds out and rinse the peppers.
In a small bowl, mix together the cheddar cheese and cream cheese until combined.
Fill each jalapeno half with the cheese mixture, then place it cheese side down on the chicken.
Roll the chicken around the cheese stuffed pepper.
Wrap each chicken breast with 2 pieces of bacon, tucking the ends of the bacon in to hold it all together.
Bake for 20 minutes, flipping once.
Turn the oven temperature down to 375°F. Remove chicken from the oven and coat with barbecue sauce. Return to oven and bake for 5-6 minutes. Then broil for 1-2 minutes to crisp up the bacon.
