Creamy Cauliflower and Potato Soup

Comfort food at its finest, warm up with Creamy Cauliflower and Potato Soup. Loaded with vegetables and hearty potatoes, this is a true meal of a soup.

Ingredients:
 4 tbsp butter
 1 onion, chopped
 2 potatoes, peeled, cut into chunks
 1 cauliflower, cut into florets
 3 cups vegetable stock
 1 ½ cups cream
 salt
 pepper (white and black)
Directions:

Heat a large pot over medium-high heat. Add butter and melt it down.

Add the onion and saute until softened and fragrant, about 5 minutes.

Add the cauliflower, potato, stock, and cream. Season to taste.

Bring to a boil, then reduce to simmer. Simmer for 30 minutes until the cauliflower and potatoes are tender and very soft.

Using an immersion blender, blend the soup until thick and creamy.

Serve hot and garnish with cheese, fresh herbs, or roasted vegetables.
