Crispy Bacon Wrapped Asparagus

Crispy Bacon Wrapped Asparagus is an easy appetizer or side that's fancy enough to have at a nice dinner party but easy enough for a weeknight dinner. This is also a great way to serve up vegetables if you have any picky veggie eaters. Even though the asparagus is bacon wrapped, its still a great way to get your vitamins and minerals in.

I prefer thicker cut asparagus for this recipe but any size can work. If you want to use those tiny asparagus you sometimes see at the store just bundle a few together to keep a good asparagus-to-bacon ratio. Sprinkling some Parmesan on top of these right before they bake is also a great idea if you want to add some extra pizzazz.

Ingredients:
 30 asparagus spears, ends trimmed
 15 bacon, cut in half lengthwise
 1 tbsp olive oil
 salt
 pepper
Directions:

In a large pot, bring water to boil and pour salt, vinegar and a little oil and boil asparagus for a few minutes (3 to 5 min).

Meanwhile, preheat the oven to broil and arrange a rack about 5 to 6 inches below the heating element.

Place the asparagus on a baking sheet, drizzle with olive oil, and season with salt and pepper. Using your hands, toss until the spears until they are evenly coated with the oil. Transfer them to the large baking sheet and set the baking sheet aside.

Wrap each asparagus with 1 half-slice of bacon in a downward spiral toward the cut end, making sure to overlap some of the bacon so there is no asparagus showing. Place on the baking sheet.

Broil for 3-6 minutes, remove the baking sheet from the oven and flip the asparagus over. Return the baking sheet to the oven and continue to broil until the asparagus is charred in spots and the bacon is crisped and browned, about 3-6 minutes more.
