Homestyle Cornbread Waffles

I'm a huge fan of cornbread, so any way I can incorporate it into a new meal is a win in my books. This Homestyle Cornbread Waffle recipe is perfect for when you want to try something new in place of your regular waffle recipe. This batter can easily be used for pancakes instead but I find that the nooks and crannies of a waffle hold toppings better than pancakes.

Cornbread Waffles freeze great so feel free to double this recipe and stow them away for a morning when you don't feel like cooking. Just pop these in the toaster for a couple minutes and you have a great morning solution.

Ingredients:
 ¾ cup coarse yellow cornmeal
 ¾ cup flour
 1 tsp baking powder
 1 tsp baking soda
 2 tbsp honey
 1 tbsp molasses
 1 cup buttermilk
 4 tbsp browned butter
 1 egg
 ½ tsp salt
 1 pinch nutmeg, grated

First, preheat a waffle iron. Meanwhile, combine cornmeal, flour, baking soda, baking powder, nutmeg, salt in a bowl.

Then, whisk the honey, molasses, browned butter, egg, and buttermilk in a separate bowl. Next, pour this mixture over the cornmeal and flour mixture and stir until well combined. Set aside and let it stands for 10 minutes.

After that, pour the waffle batter onto hot waffle iron, and cook till golden. Serve with any kind of toppings you like.
