Meal-Prep Egg Cups

I will do anything to make my mornings easier. And if that means being able to prep a weeks worth of breakfast on a Sunday night, that's even better! I make 5 of these Meal-Prep Egg Cups on Sunday night and just crack an egg into one every morning. A minute in the microwave and I am ready to go!

Customize this with whatever ingredients you love (or just have in your fridge!) and I guarantee you'll be impressed with the results.

Ingredients:
 2 oz ham, diced
 ½ cup bell pepper, diced
 ¼ cup onion, diced
 ½ cup cheddar cheese, shredded
 2 tsp butter
 1 tbsp parsley
 4 eggs
 salt
Directions:

Firstly, take four resealable containers and divide between them equal amounts of ham, bell pepper, onion, cheddar, and butter. season with salt.

In case you want to save time in the morning, and have it prepared for the whole working week, you can seal the containers at this stage and store for up to 4-5 days.

When you're ready to make the eggs, add one egg, stir to combine, and sprinkle some extra cheese on top.

After that, cover the mug with a paper towel and microwave on high power at 30 second intervals for about one minute. Eat while hot.
