Kid-Friendly Meatloaf “Cupcakes” with Mashed Potato “Frosting”

Meatloaf "Cupcakes" are a new take on a classic meatloaf and mashed potatoes. Piping mashed potatoes on top of mini meatloaves makes this a fun recipe for kids and grown-ups alike.

Ingredients:
 1 lb ground beef
 1 egg
 ¾ cup milk
 1 cup Cheddar cheese, grated
 ½ cup oats
 ½ tsp garlic powder
 2 tsp onion powder
 2 tsp Worcestershire sauce
 ¼ cup crackers, crushed
  cup ketchup
 1 tbsp brown sugar
 2 tsp mustard
 2 cups mashed potatoes
 1 tbsp parsley, chopped
 salt
 pepper
Directions:

First, preheat your oven to 350 F.

In a small bowl, mix ketchup, sugar, and mustard until combined. Set aside.

In another bowl, mix the remaining ingredients until fully combined. Press the meat mixture into a greased or lined muffin pan. Next, on top of each meatloaf, spread the ketchup and mustard mixture.

Bake in the oven for 30-45 minutes.

Transfer mashed potatoes to a piping bag and set aside until needed.

When done, allow to cool for 5 minutes and then take it out the pan. Pipe on the mashed potato to look like frosting. Sprinkle with parsley and serve.
