Peanut Sauce “Voodles”

"Voodles", or "Vegetable Noodles" are a great substitute for noodles if you're trying to introduce more vegetables into your diet or if you are working towards a low-carb lifestyle. These vegetables shine when paired with a simple 5 ingredient peanut sauce.

Ingredients:
 2 zucchini
 2 large carrots
 2 tbsp peanut butter
 1 tbsp hoisin sauce
 1 tsp soy sauce
 2 garlic, minced
 2 tbsp oil
 ½ cup cashews
 salt
Directions:

If you own a spiralizer, spiralize your zucchini and carrots. If not, use a box grater to create long strips of "voodles".

Add the peanut butter, hoisin sauce, soy sauce, lime and garlic to a skillet on medium-high heat.

Add the voodles, salt, cashews, and oil. Stir the noodles until everything is coated in the sauce, about 4-5 minutes. The vegetables should soften and release some moisture, which will create a sauce to coat the voodles.

Serve warm.
