Pesto Stuffed Chicken with Roasted Tomatoes is a one pan dinner that pairs pesto and grape tomatoes into a delicious and easy meal.

Ingredients:
 2 chicken breasts
 4 tbsp mascarpone
 2 tbsp pesto
 ½ cup bread crumbs
 4 tbsp olive oil
 1 cup grape tomatoes
 salt
 pepper

Preheat oven to 400°F.

Slice each chicken breast lengthwise in half to form a pocket to stuff the chicken, leaving one end intact.

In a small bowl, mix together the mascarpone and pesto.

Fill each chicken breast with the cheesy pesto mixture and brush with oil.

Season with salt and pepper and then coat in seasoned breadcrumbs.

On a baking sheet, add grape tomatoes and coat in oil. Then, add the stuffed chicken to the same pan.
