Gluten-Free Rainbow Cauliflower Pizza

A pizza craving is no joke, and while this is a healthy alternative, I promise you will still be satisfied. If you've never had or made cauliflower crust before, don't be worried. By watching our video you'll see that it is simple and actually holds together pretty well in comparison to a traditional crust. The rainbow topping is really delicious and a great way to get kids interested in eating (or even making!) this pizza. Customize with your favorite vegetable toppings to make this a meal you won't forget!

Ingredients:
 1 head of cauliflower (3 cups once processed)
 1 cup Parmesan cheese, shredded
 1 ½ cups Mozzarella cheese, grated
 1 egg
 ½ tsp garlic power
 ½ tsp dry basil or rosemary
 ½ tsp dry oregano
 ½ cup marinara sauce
 1 cup bell peppers, diced (yellow, orange, green, red)
 ½ cup broccoli florets
 ½ cup red onion, diced
 ¼ cup canned corn
 ½ cup tomatoes, diced
 salt

Preheat oven to 500 F.

Meanwhile, remove the stem from the cauliflower and cut into smaller pieces. Then, in a food processor pulse the cauliflower until the texture is very fine, almost like rice.

Heat oil in a pan and fry the cauliflower for 10-15 min to dehydrate it. Then add garlic powder the oregano and the basil or rosemary, season with salt. After that, add all of the Parmesan cheese, and half a cup of Mozzarella cheese. Take it off the heat and stir in a beaten egg. Stir until a dough texture forms.

Spread the cauliflower mixture out onto lightly greased parchment paper or a pizza pan in the shape of a pizza crust. After that, bake the crust for approximately 10-15 minutes, or until the crust is golden and crispy.

After the crust is golden brown, remove it from the oven and add your marinara sauce, cheese and other toppings onto it.

Return the pizza to the oven and continue baking for another 15 minutes. Remove from the oven when the sides of the pizza look golden brown and the cheese is melted.
