Spinach Stuffed Salmon

Spinach stuffed salmon is packed with incredible cream cheese, spinach, parmesan and garlic mixture. Each salmon fillet is loaded with so much flavor and the great thing is that it's a low carb recipe. This salmon is so tasty and good it's easy to forget how simple it was to make.

Ingredients:
 4 salmon fillets
 3 tbsp lemon juice
 2 tbsp olive oil
 2 tbsp butter
 4 oz cream cheese
 4 oz frozen spinach, thawed
 ¼ cup Parmesan cheese, grated
 2 cloves garlic, minced
 salt
 pepper
Directions:

Cut a slit into each piece of salmon, making it possible to stuff them later. Then, season all surfaces of each piece of salmon with salt, pepper ,1 tbsp olive oil and 2 tbsp of lemon juice.

In a medium bowl, mix together the cream cheese, Parmesan cheese, spinach, and 2 tsp of garlic Stir well and taste to season.

After that, stuff the salmon with as much of the spinach mixture as will fit, making sure to push it back to the far end of the salmon

After stuffing, heat 1 tbsp of the butter in a pan over medium heat. Fry each stuffed salmon 5-7 minutes on both sides until the fish is cooked through.

Serve with brown rice and a large salad to complete the meal.
