The colors of this dish just open the appetite right up. This is a flavorful fresh side dish or dip, great for summer days. The freshness and crispness of the fresh vegetables, and the hotness of the jalapenos amounts to an absolutely phenomenal and easy dish!

Ingredients:
 ½ onion, chopped
 1 green bell pepper, chopped
 4 green onions, chopped
 2 jalepenos, chopped
 ½ tbsp garlic, minced
 1 pt cherry tomatoes, quartered
 8 oz Italian dressing
 15 oz can black beans, drained
 15 oz can black-eyed peas, drained
 ½ tsp ground coriander
 1 fresh cilantro, chopped
 salt
 pepper
Directions:

Dice all the large ingredients into small pieces.

In a large bowl, mix together onion, green bell pepper, green onions, jalapenos, garlic, cherry tomatoes, zesty Italian dressing, black beans, black-eyed peas, and coriander. Cover and chill in the refrigerator for approximately 1 hours. Toss with the desired amount of fresh cilantro to serve.
